Potbelly is known as a sandwich shop and unfortunately, they don’t offer any gluten-free bread. They do provide salads with a variety of toppings and dressings, just make sure to ask for no croutons.
They also have shakes and smoothies to enjoy, but make sure not to get a malt, as they contain gluten, and ask for no butter cookies on your straw. We wish they provided a bread option to enjoy the main feature of their restaurant.

Potbelly History
Potbelly is a sandwich restaurant chain that was founded in 1977 by a young man named Bryant Keil. The first shop was located at Lincoln Avenue in Chicago, Illinois. Together with his partners, Keil set out to popularize the company across the country by creating restaurants that bore certain aspects of resemblance to their neighborhoods. Since then, the restaurant chain has grown to now include more than 400 locations spread across America.
Their restaurant model is fashioned around the potbelly stove which is a cast iron wood burning stove with a round bulge at the center. It’s perfect for both traditional style cooking of food and heating. Though Potbelly locations are currently being opened at high rates, Founding Chairman Bryant is still dedicated to preserving the uniqueness of each restaurant in a bid to protect the company from becoming just another fast food chain.
Potbelly’s menu features a wide variety of sandwiches that are served hot on multi-grain or regular wheat bread. Their sandwiches can be ordered in various styles, though the most popular one is thin-cut where 1/3 of the bread is sliced out to create room for toppings. The company began offering salads in 2007 and their menu also includes other items like soup, malts, smoothies, shakes and cookies. Furthermore, most restaurants feature live music from local performers during lunch hours.
Though Bryant often takes a low-profile approach to managing the business, statistics still speak loudly for the company and people are noticing just how successful Potbelly is. In 2007, he was awarded the Entrepreneur of the Year Award by Ernst & Young after receiving a similar award from the Illinois Restaurant Association about four years earlier. In addition, Crain’s Chicago Business mentioned Keil as one of their “40 under 40” emerging business leaders.
Potbelly restaurant has a habit of buying and including little touches, quirks and artifacts from the local community where they are operating. Customers can literally look around at the restaurants and find what they have created from scratch.

Summary
Potbelly does not have that many gluten-free options on their menu. If your in the mood for a salad or a dessert drink, it might be an ok place to go, but as this is a sandwich shop, we wish they provided a gluten-free bread alternative to enjoy with the main items on their menu. You could try bringing your own bread, but it might be easier to just go somewhere else if your avoiding gluten.
There are a lot of places that have gluten free bread now. And, it is really good. What’s with the slow response?
I don’t dine alone usually, so “going somewhere else” is a bit difficult.

Definitely agree. It’s hard to choose Potbelly as an eating destination until they get gluten-free bread. It’s frustrating when dining out with friends, having the salad as your only option.
